For me if I was using the recipe above as a meal such as breakfast or lunch it would be 1 serving if I was making as a snack it would be 2 servings. I would eat half and put the other pancakes in a bag for later. Everyone has different calorie/macro needs.

Pumpkin Protein Pancakes

  • 1 Scoop Protein Powder aprox 30 grams
  • 1/2 Cup Raw Pumkin or applesauce
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Allspice
  • 1 Egg
  • 1/2 Cup Oats
  • 1/2 Cup Water
  • 1 Packet Stevia or 1 TBS Honey
  1. Put everything in a blender liquids first
  2. Blend up and make pancakes on a hot pan or griddle. The pancakes stay extra moist because of the pumpkin so they may appear not to be cooked all the way through.Voila 
  3. Since you opened up a can of pumpkin you might as well triple or quadruple the recipe above and use up the can. 
  4. These pancakes freeze and re-heat without any degrade to taste.
