Zesty Garlic Sweet Potato Fries

This recipe has many wonderful benefits a few of them include:
No cholesterol
Low in Sodium and Sugar
High in Vitamin A – great for vision, immune system and normal reproduction. Something surprising I learned is it bacteria and viruses from entering the intestinal tract.
High in Vitamin C – as many of you know helps heal wounds, fight infections and promotes healthy bones, gums and teeth.

  • Yields: 8 servings

Ingredients

4 Sweet Potatoes or 4 Yams

3 T Olive Oil

2 tsp Paprika

¼ cup of Parsley

1 T lemon zest and a squeeze of lemon juice

Directions

1Preheat oven to 425

2Cut 4 potatoes into fry size wedges and place in a large freezer bag or container

3Add the following to the bag/container

43 T Olive Oil and 2 tsp of paprika

5Shake the bag or container to mix the oil and seasoning over fries

6Bake 45 minutes to an hour on 425

7While fries are baking mix parsley, lemon and garlic in a bowl

8Once fries are done transfer to a serving bowl sprinkle parsley mixture over fries and mix

9Top with Salt & Pepper if you like
